Gluten Free Vegan Millets Burger Buns

Ingredients

  • 100 g NIHKAN All Purpose Millets Mix
  • 5 g Psyllium husk + 100 g lukewarm water
  • 2 g active dry yeast/2 g instant fresh yeast
  • 4 g (1 tsp) powdered or caster sugar/jaggery
  • 50 g lukewarm water
  • 8 g (1.5 tsp) Olive/Vegetable Oil
  • 2 g Apple cider vinegar
  • 2 g (1/2 tsp) salt
  • 1 tsp melted Butter for brushing bread before baking

Instructions

You can prepare the dough using a mixer fitted with the dough hook attachment or by hand.

  1. Make the psyllium gel with psyllium husk and lukewarm water.
  2. In a large bowl, whisk together dry ingredients All Purpose Millets Mix . Add salt, sugar & fresh yeast if you are using instant one.
  3. If you are using active dry yeast, then activate it first. Mix it together with the sugar and 50 g lukewarm water . Set aside for 5-10 minutes, or until the mixture starts frothing.
  4. Make space in the middle of the dry ingredients and add the psyllium gel, olive oil , vinegar & activated yeast.
  5. Knead the dough with mixer or hand until it’s smooth.
  6. Turn out the dough onto a lightly floured surface and roll it out into a circle. Cut the dough in 4 equal parts and make 4 balls. Cover the dough and proof in a warm spot until half more in size. Should take around 45min.
