Gluten free Vegan Coconut Sorghum Cookies

Ingredients

  • 65 g ( 1/2 cup) NIHKAN Sprouted sorghum flour
  • 15 g (1tbsp) NIHKAN Green Banana flour
  • 50 g coconut Oil
  • 30 g water
  • 35 g powdered brown sugar
  • 1/4 tsp Baking powder
  • 1/8 tsp Baking soda
  • Desiccated coconut 2-3 tbsp

Instructions

  1. Mix oil and water in a bowl. You can use blender as well or mix well with hand.
  2. Sieve flour, sugar, baking powder , baking soda together.
  3. Add dry ingredients to wet ingredients.
  4. Add chocolate chunks and mix them.
  5. Use your hands and bind the flour well together. The texture will be little soft.
  6. Make balls with your hand and press them gently between your hands. And lay them flat on greased baking tray.
  7. You can add more coconut on top. Bake in preheated oven at 180 degree C for 18-20 mins until golden brown.

Allow them to cool completely for crispness.
