Gluten Free Millet Chocolate and Strawberry loaf cake

Ingredients

  • 2 cup Nihkan’s Millet Baking Mix
  • 1 cup jaggery powder
  • ¼ cup oil
  • 1 ½ cup milk
  • 2 tbsp cocoa powder
  • 1 tsp vanilla extract
  • Pinch of salt

Ingredients for ganache

  • 3/4 cup chopped dark chocolate
  • 3/4 cup cream

Garnish

  • 8 to 10 Strawberries thinly chopped

Instructions

Instruction to make ganache:

Add the chocolate to a medium bowl. Heat the cream in a small saucepan over medium heat just until it bubbles around the edges or you can heat it in the microwave. Pour cream over the chocolate chips. Let the mixture stand for 30 seconds, then stir until the chocolate melts and a smooth ganache comes together, about 1-2 minutes. Cool it down.

Instructions for baking cake:

  1. Firstly, in a large bowl take jaggery powder, oil, milk and whisk well making sure jaggery melts completely.
  2. Add Millets Baking mix and cocoa powder.
  3. Also add 1 tsp vanilla extract, pinch salt.
  4. Mix well making sure everything is well combined.
  5. Further, add milk as required and mix until the batter turns silky smooth consistency.
  6. Transfer the cake batter to a cake mould
  7. Also, tap twice to level up uniformly and remove any air bubbles if present. Place the cake pan into a preheated oven.
  8. Preheat and bake at 180-degree Celsius for 45 minutes. Cool down and enjoy.
