Gluten Free Christmas Fruit Cake with Millet Mix Flour

Ingredients

Ingredients for soaking dried fruits

  • 100 gms- 1 cup dried fruits of your choice (mixed berries, raisins, apricots, dates etc)
  • 50 gms Tutti Frutti
  • 200 ml orange juice (canned)

Ingredients for cake Batter

  • 100gms salted butter
  • 75gms orange juice (canned)
  • 150gms millet baking mix
  • 150gms condensed milk
  • ½ tsp vanilla essence
  • 1 tsp molases

ngredients for spice mix

  • ¼ tsp cloves powder
  • ¼ tsp cinnamon powder
  • 1/4 tsp cardamom powder
  • ¼ tsp ginger powder

Tip: Soak the dried fruits overnight in orange juice with the spice mix.

Instructions

  1. 1.Firstly, in a large bowl take melted butter, orange juice, Condensed milk, Vanilla extract, Molasse and mix it well.

    2.Then add in your soaked dried fruits mix and mix well combining all well.

    3.Later fold in the Baking Millet Mix and combine everything well together and see to it that the batter is of pouring consistency, you can adjust the batter adding more orange juice to it.

    4.Transfer the fruit cake batter to a cake tin. Make sure to line a butter paper at the bottom to prevent from sticking.

    5.Tap twice to level up uniformly and remove any air bubbles if present.

    6.Place the cake pan into the preheated oven and bake at 180 degrees for 30 mins.

    7.Insert a toothpick and check if the cake has baked completely.

    8.Cool and then unmould the Christmas cake!
