Gluten free Vegan Cranberry Sorghum Cookies

Ingredients

  • 130 g ( 1 cup) NIHKAN Sprouted sorghum flour
  • 30 g (2 tbsp) NIHKAN Green Banana flour
  • 100 g Oil
  • 60 g water
  • 70 g powdered brown sugar
  • 1/2 tsp Baking powder
  • 1/4 tsp Baking soda
  • 1 tsp vanilla extract
  • Pitted dry cranberries

Instructions

  1. Mix oil and water in a bowl. You can use blender as well or mix well with hand.
  2. Sieve flour, sugar, baking powder , baking soda together.
  3. Add dry ingredients to wet ingredients.
  4. Add cranberries and mix them. The texture will be little soft.
  5. Use your hands and bind the flour well together.
  6. Make balls with your hand and press them gently between your hands. And lay them flat on greased baking tray.
  7. You can add more cranberries on top. Bake in preheated oven at 180 degree C for 18-20 mins until golden brown.

Allow them to cool completely for crispness.
