Gluten free Banana Walnut Bread (Tea Cake)

Ingredients

  • 3/4 cup of NihKan’s Millets Baking Mix
  • 2 over ripe bananas
  • 1/2 tsp of salt
  • 1/4 cup of olive oil
  • 1/2 cups granulated brown sugar
  • Butter milk – 1/2 cup milk (or alternatives) + 2 tsp apple cider vinegar
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon powder
  • pinch of nutmeg
  • 1/4 cup hot water
  • Crushed walnuts 1/2 cup

Instructions

  1. Take bananas in a bowl and mash them with fork.
  2. Add salt, powdered sugar, butter milk, vanilla extract, cinnamon, nutmeg, oil. Keep mixing them one by one.
  3. Mix all well.
  4. Add dry ingredient- Baking Mix flour
  5. Add some water to adjust consistency.
  6. Mix evenly. Use folding batter method.
  7. Pour the batter into greased tin. Add crushed walnuts on top. You can decorate some banana slices on top as well.
  8. Bake in preheated oven at 180 degree C for 30-35 mins.
